Monday Meal Round Up


I’m happy to announce this week was better than last week.  I’m still dealing with a lot of upset people over denied homeowner’s claims, but I’ve been self-medicating with warm apple pie and ice cream in the evenings.  I made it last Monday night right after I got home from work.  In my opinion, there’s something almost magical about the crunchiness of the crisp topping contrasting with the soft texture of the baked apple.  Not to mention, the sweet harmony of flavor between the half melted ice cream blending with the cinnamon.  I’m almost ashamed to admit that I finished it off for breakfast on Wednesday; but, I’m not :) In hind sight, I should have taken some photos of it and blogged about it.
I’m not sure what it is about the cooler weather, but I start to crave apples, caramel and cinnamon like a madwoman.  This afternoon, I was rummaging through the fridge trying to plan my meals for the upcoming week.  I happened to noticed two apples rolling around in the crisper and some left over crisp topping from the pie last week.  Seeing them made my mouth water for another succulent piece of pie.  However, I need to show some dietary restraint this week.  My mom used to say: “A moment on the lips; forever on the hips!”   Anyways, I compromised with Streusel-Topped Apple Muffins out of Bette Hagman’s cookbook:  The Gluten Free Gourmet Bakes Bread.  They look and smell good, but I haven’t tried them yet.

Here’s what on our menu:
Breakfast:  Granola, muffins, and tea
Lunch:  Rice crackers and cheese, fruit, popcorn, yogurt
Snacks: Apple slices with Caramel Dip.   
Dinners:
Monday – Grilled BBQ pork roast, Apple sauce, Green Beans.  (Maybe some grits)
Tuesday – BLT’s and French Fries
Wednesday – Grilled Flank Steak, Risotto, and left over Green Beans
Thursday – Soup and salad
Friday – BBQ Pork Sandwiches and Mac/Cheese

Heather over at Celiac Family, was busy making a rainy day rainy day special for her children by whipping up a batch of play dough.  Their after school snacks will be apple slices.   Her menu this week will feature: Mexican chicken tacos with avocado salsa, chicken nuggets with baby potatoes and steamed broccoli, flank steak, white chicken chili with corn tortillas, parmesan tilapia with jasmine rice and asparagus, and spaghetti and meatballs.   

Amanda over at Gluten Fee Detroit Metro had fun with the family at Miller’s Big Red Greenhouse and Cider Mill.  She now has apples for all kinds of goodies like apple crisps, apple sauce, slices and caramel apples.  Her menu this week will feature: pork chops, green beans, and mash potatoes, pasta and meatballs, soup & sandwiches, and tater tot casserole.   

Renee over at Beyond Rice and Tofu will be busy using up veggies from her garden this week.  She’s being overrun by grape tomatoes, tomatillos, and kale.  However, she may be able to sneak in a batch of backed oatmeal bars.  Her menu will feature: creamy pesto pasta with chunky tomato salsa, kale with sun-dried tomatoes and garbanzo beans over polenta, stir fried tofu with miso sauce, red beans and rice, and pizza.
Angela over at Angela’s Kitchen is busy keeping up with kids, her father, and not to mention the final revisions of her ebook.  However, she’ll try to sneak some time in for gardening and knitting.  Her menu will feature, pumpkin enchilada casserole, left over beef and butternut stew, chicken broccoli casserole, apple waffles and homemade turkey sausage with apple-pecan topping, and pizza.

    The muffins look amazing! Love their high domes and the strussel. I am going to have to pull that cookbook out to try that one. I am so glad your week is a little calmer than last week. And, yes, apple pie is a perfect breakfast! :) I agree that fall just begs for you to bake with cinnamon. I have apple butter simmering and pumpkin bars going right now... I love the smells of fall! It is the best time to bake!
